The build
Six layers, one burger.
- 01Top bunA soft potato bun, dusted with flour, pink sauce on the underside.
- 02PicklesTwo dill pickle coins.
- 03OnionThin rings of white onion, raw, for the crunch.
- 04Patty + AmericanSmashed thin on the steel, the cheese melted on before it comes off.
- 05Patty + AmericanThe second one. That is what makes it a double.
- 06Potato bunThe heel, toasted on the flat top, holding it all together.
The crust
Two patties. Pressed thin, seared hard.
The beef goes on the hot steel as a ball and gets pressed flat. The thin edge browns into lace and the middle stays juicy. The cheese goes on while it is still on the heat.
How the smash works
Three moves on the steel.
- 01A ball of beef hits the flat top, hot and dry.
- 02We press it flat and leave it alone until the edge goes brown and lacy.
- 03Flip, cheese, the second patty, the bun. Wrapped in paper, handed over.
